Grilled Apple, Bacon and Cheddar Sandwich with Roasted Red Onion Mayo


This sandwich is definitely not your average sandwich. It is is very tasty and the flavors go together great. I fixed it a several times, once only using 2 slices of cheddar. The number of cheese slices didn't make a big difference. It was yummy both ways.
Sandwich:
2 slices (1/2-inch-thick) sourdough, multigrain or another hearty bread
4 slices thick-cut bacon, cooked crisp
4 slices Cheddar
1/2 Granny Smith apple, cored, sliced thin
Roasted Red Onion Mayo, recipe follows
Butter
Preheat a seasoned grill pan or griddle over medium heat. Assemble this sandwich just as you would a traditional grilled cheese sandwich: spread 1 slice of bread with some Red Onion Mayo, then top with 2 slices Cheddar, the bacon, the apple slices, then 2 more slices of Cheddar, finishing with another mayo-slathered slice of bread. Butter the outsides of the bread and transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.
Roasted Red Onion Mayo:
1 medium red onion, chopped
2 teaspoons olive oil
salt and pepper
1 cup mayonnaise
Preheat oven to 375 degrees F. On a small rimmed baking sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally. Remove from oven and let cool. Transfer to a food processor and buzz until finely chopped. Add the mayo and pulse until smooth and combined.

Hot Fudge Cake

Hot Fude Cake is one of my absolute favorites. When we were younger, my mom always fixed our choice of cake for our birthday. This was my choice many times. I try not to fix it too often now, because I majorly overeat. My mouth is watering, just writing about it. Hope you enjoy as much as I do.


Hot Fudge Cake

* 1 box Devil's Food cake mix
* 1 box vanilla ice cream
* 1 to 2 jars hot fudge topping (I use Hershey's in a jar)
* 1 to 2 cans whipped topping (I use Reddi Whip extra creamy)
* maraschino cherries (optional)

Prepare the cake as directed on the box, using a 13x9in. pan. After the cake is done baking... you can let it cool or serve it while the cake is hot. Cut your cake into squares (however big you want your piece of cake), slice in half side to side. It is easier to use the ice cream that comes in a box, cut square slices of ice cream about the same size as your cake slices, maybe 1/2 to 3/4 inch thick. Place the ice cream in between your sliced cake squares. Heat the hot fudge in the microwave until it is warm. Pour the desired amount of hot fudge over your cake. Top with however much whipped topping you want and add a cherry or 2 on top if you want.
*I use alot of hot fudge and whipped cream on mine, so I always need to jars and 2 cans. If you go light, you could possibly get by using one of each.

Sweet Iced Tea


































This recipe was given to us by someone very dear to my husband.... Carolyn L. When we were newly married my mother-in-law gave us an iced tea maker and Dewayne insisted I call Carolyn to see how she made her tea. We have since upgraded to a new tea maker I received at a Chinese Gift Exchange during the holidays, but still use the same recipe everytime. I am not a big fan of tea, therefore have not tasted. Dewayne is a sweet tea fanatic... he loves this tea and can drink a gallon in a days time. Hope you enjoy your perfect glass of sweet tea(plus the lemon.... which we are missing).

*First of all you will need an iced tea maker, mine came from Wal-Mart (Mr. Coffee and cost around $20.oo). You can get any kind you prefer, I even saw one at a garage sale over the summer for $2.oo.

*1 gallon of hot water
*4 Lipton family size tea bags
*2 cups of sugar

Pour as much of the hot water into the tea maker as possible (a gallon of water will not fit into my tea maker). Follow the directions for your tea maker. I set my strength to strong. When the tea quits brewing and the light turns off you will have to pour in more water and turn the maker on again. When it quits brewing again you should be able to pour the remaining water in the tea maker. Pour your brewed tea in the empty gallon container and hit the on buttonagain. When finished pour the rest of the tea in your gallon container and add 2 cups of sugar immediately. It is very important to add the sugar while your tea is hot. Stir well, dissolving all sugar. Pour over a glass full of ice, add lemon and serve. Refrigerate any leftover tea. * *You can omit all of the brewing, pouring, brewing, pouring if you want to half the recipe and make half a gallon of tea. My tea maker will hold close to 1/2 a gallon of water.
